Ingredients:

Bitter Gourd (Karelas) 1/4 kgs
Tamarind 5-6 small pieces
Peanuts  
Red chilli powder  
Turmeric Powder  
Coriander Powder  
Cumin Powder  
Vinegar or Lemon Juice 1/2 tsp
Salt to taste  
Coriander leaves to garnish  
   

   
Method:
1. Cut bitter gourd in 2-3 equal slices
2. Add tamarind and salt to water. Add bitter gourd. Boil for 10 mins.
3. Drain water and wash bitter gourd.
4. Roast peanuts and ground them to get powder.
5. Heat oil in pan. Add peanut powder, red chilli powder, turmeric powder, coriander powder, cumin powder, vinegar (or lemon juice) and salt.
6. Now add bitter gourd and cook on low heat for 5-7 mins. Sprinkle little water (if required).
7. Garnish with coriander leaves
   
  Serve hot with roti.
